It was a beautiful sunny summer day, with tree canopies for shade. We enjoyed delicious home-made vegan treats: new pickles, hummus, mustard potato salad, tahini potato salad, Texas caviar and chips, chopped salad, fresh pineapple slices, mushroom tart, chocolate crazy dump cake, cookies. We successfully boycotted single use plastic; an exception was the presence of one bottle of commercial bottled water that had been sitting unused on a shelf so long that it was brought for a potential thirsty visitor. We learned about history of Maplewood Park, designed by Olmsted, and walked along a wooded path with Antonius, from Cornell Cooperative Extension. The afternoon was a very welcome opportunity to meet face to face socially, with no business agenda.
Wacky Cake recipe from Ruth:
In an 8”x8” cake pan mix together 1 1/2 c. Flour, 1/2 c sugar, 4 T cocoa, 1/2 tsp salt, 1 tsp baking soda. Make 3 indentations. Pour 6 T oil in one, 1 T vinegar in another and 1 tsp vanilla in the last. Pour 1 cup of water over it all and stir with a fork until smooth. Bake at 350 for 25-30 min.
